Green Bean Casserole With Mushroom And Cracker Topping

Ingredients

  • 4 cups fresh green beans, trimmed
  • 1 cup diced onion
  • 2 cups diced mushrooms
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 cup skim milk
  • 1 tablespoon Worcestershire sauce
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 16 ounces low sodium whole wheat crackers
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon onion powder
  • Salt to taste

Method

  1. 1 Preheat oven to 350°F. Blanch green beans in boiling water for 4 minutes, then plunge into ice water to stop cooking. Drain and set aside.
  2. 2 Microwave diced onions and mushrooms for 2.5 minutes to soften. Set aside.
  3. 3 Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Whisk in milk and cook until thickened into a white sauce.
  4. 4 Stir Worcestershire sauce, garlic powder, pepper, and salt into the sauce. Fold in green beans, onions, and mushrooms.
  5. 5 Pour mixture into a sprayed casserole dish. Mix crushed crackers with olive oil and onion powder; sprinkle over top.
