Green Bean Casserole With Mushroom And Cracker Topping
Ingredients
- 4 cups fresh green beans, trimmed
- 1 cup diced onion
- 2 cups diced mushrooms
- 1 tablespoon butter
- 2 tablespoons flour
- 1 cup skim milk
- 1 tablespoon Worcestershire sauce
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- 16 ounces low sodium whole wheat crackers
- 1/2 teaspoon olive oil
- 1/2 teaspoon onion powder
- Salt to taste
Method
- 1 Preheat oven to 350°F. Blanch green beans in boiling water for 4 minutes, then plunge into ice water to stop cooking. Drain and set aside.
- 2 Microwave diced onions and mushrooms for 2.5 minutes to soften. Set aside.
- 3 Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Whisk in milk and cook until thickened into a white sauce.
- 4 Stir Worcestershire sauce, garlic powder, pepper, and salt into the sauce. Fold in green beans, onions, and mushrooms.
- 5 Pour mixture into a sprayed casserole dish. Mix crushed crackers with olive oil and onion powder; sprinkle over top.
- 6 Bake at 350°F for 30 minutes or until topping is golden brown.
