Greek Yogurt Cucumber Dip

Ingredients

  • 2 cups plain low-fat yogurt
  • 1/2 cup grated cucumber, peeled and seeded
  • 1 tablespoon non-fat sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill
  • 1 clove garlic, chopped
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 1 cup baby carrots

Method

  1. 1 Wash hands. Peel, seed, and grate one cucumber. Slice the other cucumber and set aside.
  2. 2 In a serving bowl, mix yogurt, grated cucumber, sour cream, lemon juice, dill, and garlic.
  3. 3 Chill the dip for 1 hour.
  4. 4 Arrange tomatoes, sliced cucumbers, broccoli, and carrots on a platter. Serve with the chilled dip.
