Grated Potato Pancakes With Onion
Ingredients
- 8-10 good-sized potatoes
- 4 eggs, well beaten
- 2 tsp salt
- ½ cup flour
- ½ tsp baking powder
- butter for serving
- grated onion (optional)
Method
- 1 Peel potatoes and soak in cold water to prevent discoloration. Grate them rapidly on a coarse grater.
- 2 To the grated potato pulp, add beaten eggs, salt, and flour sifted with baking powder. Mix lightly but thoroughly.
- 3 Bake on a hot griddle until golden. Serve with butter, avoiding syrup. Optionally add grated onion.
