Grated Fresh Corn Pudding With Pepper
Ingredients
- 4 large ears of corn, grated
- 1 heaping tablespoon butter
- 1 teaspoon flour
- 1 teaspoon sugar
- 1 whole egg plus 1 yolk
- 1 pint milk
- Salt and pepper to taste
Method
- 1 Melt butter and stir into the grated corn.
- 2 Beat the eggs together.
- 3 Add the eggs, milk, sugar, flour, salt, and pepper to the corn mixture and stir to combine.
- 4 Pour into a shallow baking dish.
- 5 Bake in a moderate oven (350°F) for 20 to 30 minutes.
- 6 Do not overbake, or the pudding will become watery.
