Grated Fresh Corn Pudding With Pepper

Ingredients

  • 4 large ears of corn, grated
  • 1 heaping tablespoon butter
  • 1 teaspoon flour
  • 1 teaspoon sugar
  • 1 whole egg plus 1 yolk
  • 1 pint milk
  • Salt and pepper to taste

Method

  1. 1 Melt butter and stir into the grated corn.
  2. 2 Beat the eggs together.
  3. 3 Add the eggs, milk, sugar, flour, salt, and pepper to the corn mixture and stir to combine.
  4. 4 Pour into a shallow baking dish.
  5. 5 Bake in a moderate oven (350°F) for 20 to 30 minutes.
  6. 6 Do not overbake, or the pudding will become watery.
