Grapefruit Curd Pie With Meringue

Ingredients

  • 1 pie shell (baked)
  • 1 cup boiling water
  • 1 tbsp cornstarch
  • juice of 2 grapefruits
  • grated rind of 1 orange
  • juice of 1 orange
  • 2 egg yolks, beaten
  • 1 egg white
  • 1 tbsp butter
  • 1 egg white
  • ½ cup sugar

Method

  1. 1 Bake a pie shell as for lemon pie.
  2. 2 Mix cornstarch in cold water, then stir in boiling water.
  3. 3 Add grapefruit juice, orange rind and juice, egg yolks, egg white, and butter. Cook in a double boiler until thick, stirring constantly.
  4. 4 Pour filling into the baked shell.
  5. 5 Beat the remaining egg white with sugar until thick, then spread over the pie.
  6. 6 Bake in a moderate oven (350°F) until lightly browned. Serve cold.
