Grapefruit Curd Pie With Meringue
Ingredients
- 1 pie shell (baked)
- 1 cup boiling water
- 1 tbsp cornstarch
- juice of 2 grapefruits
- grated rind of 1 orange
- juice of 1 orange
- 2 egg yolks, beaten
- 1 egg white
- 1 tbsp butter
- 1 egg white
- ½ cup sugar
Method
- 1 Bake a pie shell as for lemon pie.
- 2 Mix cornstarch in cold water, then stir in boiling water.
- 3 Add grapefruit juice, orange rind and juice, egg yolks, egg white, and butter. Cook in a double boiler until thick, stirring constantly.
- 4 Pour filling into the baked shell.
- 5 Beat the remaining egg white with sugar until thick, then spread over the pie.
- 6 Bake in a moderate oven (350°F) until lightly browned. Serve cold.
