- sugar (for thick syrup)
- pastry (for pie tin and strips)
Method
- 1 Simmer gooseberries in a thick sugar syrup until soft.
- 2 Line a pie tin with pastry, adding a 1-inch border.
- 3 Fill with gooseberries and top with twisted pastry strips, moistening ends with water to adhere.
- 4 Bake in a hot oven (425°F) for 20 minutes.
- 5 Serve very cold with whipped cream.
