Gooseberry Jam

Ingredients

  • 10 pounds ripe gooseberries
  • 1 pint water
  • 6 pounds sugar

Method

  1. 1 Place gooseberries and water in a covered pot. Boil over heat, stirring frequently, until the fruit breaks down into a pulp.
  2. 2 Add sugar to the pulp. Stir continuously while boiling until the mixture reduces to a stiff paste.
  3. 3 Pour the hot jam into jars. Allow to cool, then cover the tops with paper and tie securely with string.
