Gooseberry Jam
Ingredients
- 10 pounds ripe gooseberries
- 1 pint water
- 6 pounds sugar
Method
- 1 Place gooseberries and water in a covered pot. Boil over heat, stirring frequently, until the fruit breaks down into a pulp.
- 2 Add sugar to the pulp. Stir continuously while boiling until the mixture reduces to a stiff paste.
- 3 Pour the hot jam into jars. Allow to cool, then cover the tops with paper and tie securely with string.
