Gooseberry Fool With Custard And Cream
Ingredients
- 2 quarts green gooseberries
- 2 quarts loaf sugar
- a very little water
- rich boiled custard
- frothed cream
Method
- 1 Remove stems and blossoms from gooseberries. Place berries in a stew pan with an equal weight of loaf sugar and a small amount of water.
- 2 Stew the berries until sufficiently soft, then pass the pulp through a sieve to remove seeds.
- 3 Allow the gooseberry pulp to cool completely.
- 4 Stir in rich boiled custard until the mixture reaches the consistency of thick cream.
- 5 Transfer to a glass bowl and top with frothed cream before serving.
