Gooseberry Custard
Ingredients
- gooseberries
- sugar
- water
- lemon juice
- 1 egg
- milk
- arrowroot or cornstarch
Method
- 1 Wash gooseberries, remove stalks and tips. Stew with sugar and just enough water until tender, or bake in a shallow dish with brown sugar.
- 2 Rub the cooked gooseberries through a fine sieve at least twice. Add lemon juice and extra sugar if needed.
- 3 Beat an egg in milk. Add arrowroot or cornstarch (amount equal to a saltspoon, approx 1/8 tsp).
- 4 Mix the custard base with the sieved gooseberries. Pass through the sieve once more and serve in a bowl.
