Gooseberry Custard Pie

Ingredients

  • 1 cup green gooseberries
  • 1/2 cup butter
  • 1/2 cup sugar
  • 10 eggs
  • 1 tsp grated lemon peel
  • 1 tsp brandy or sherry
  • 1 pie crust

Method

  1. 1 Scald green gooseberries and pulp them through a colander to make 1 cup of pulp.
  2. 2 Beat butter to a cream, then gradually add sugar.
  3. 3 Add eggs, lemon peel, and brandy, beating until light.
  4. 4 Fold in the gooseberry pulp and mix well.
  5. 5 Pour into a thin pie crust and bake at 350°F until set.
