Gooseberry Custard Pie
Ingredients
- 1 cup green gooseberries
- 1/2 cup butter
- 1/2 cup sugar
- 10 eggs
- 1 tsp grated lemon peel
- 1 tsp brandy or sherry
- 1 pie crust
Method
- 1 Scald green gooseberries and pulp them through a colander to make 1 cup of pulp.
- 2 Beat butter to a cream, then gradually add sugar.
- 3 Add eggs, lemon peel, and brandy, beating until light.
- 4 Fold in the gooseberry pulp and mix well.
- 5 Pour into a thin pie crust and bake at 350°F until set.
