Gooseberry And Custard Trifle
Ingredients
- 1 pint gooseberries
- sugar to taste
- ½ cup water
- 1 pint custard (made with custard powder)
- sponge fingers
Method
- 1 Top and tail the gooseberries and place them in a lined saucepan with sugar and water.
- 2 Stew gently until the fruit is perfectly tender.
- 3 Rub the cooked fruit through a sieve and allow it to cool completely.
- 4 Prepare the custard using custard powder and let it cool.
- 5 Mix the cold fruit puree with the cold custard.
- 6 Serve in a glass dish garnished with sponge fingers.
