Gooseberry And Custard Trifle

Ingredients

  • 1 pint gooseberries
  • sugar to taste
  • ½ cup water
  • 1 pint custard (made with custard powder)
  • sponge fingers

Method

  1. 1 Top and tail the gooseberries and place them in a lined saucepan with sugar and water.
  2. 2 Stew gently until the fruit is perfectly tender.
  3. 3 Rub the cooked fruit through a sieve and allow it to cool completely.
  4. 4 Prepare the custard using custard powder and let it cool.
  5. 5 Mix the cold fruit puree with the cold custard.
  6. 6 Serve in a glass dish garnished with sponge fingers.
