Glucose Crinkly Top Vanilla Caramels
Ingredients
- 7 lbs white sugar
- 2 lbs glucose
- ½ lb fresh butter
- 1 tin condensed milk or 1 quart sweet cream
- 3 pints water
- Vanilla flavoring
Method
- 1 Boil sugar, glucose, and water to a weak crack stage at 285°F.
- 2 Remove from heat and add butter and milk, stirring gently until dissolved.
- 3 Add vanilla flavoring just before finishing stirring.
- 4 Pour contents onto an oiled slab.
- 5 When cool enough, cut with a caramel cutter.
- 6 For a crinkly top, run over the sheet with a corded rolling pin just before cutting.
