Glucose Crinkly Top Vanilla Caramels

Ingredients

  • 7 lbs white sugar
  • 2 lbs glucose
  • ½ lb fresh butter
  • 1 tin condensed milk or 1 quart sweet cream
  • 3 pints water
  • Vanilla flavoring

Method

  1. 1 Boil sugar, glucose, and water to a weak crack stage at 285°F.
  2. 2 Remove from heat and add butter and milk, stirring gently until dissolved.
  3. 3 Add vanilla flavoring just before finishing stirring.
  4. 4 Pour contents onto an oiled slab.
  5. 5 When cool enough, cut with a caramel cutter.
  6. 6 For a crinkly top, run over the sheet with a corded rolling pin just before cutting.
