Glazed Potato Rounds With Tomato Sauce

  • 3-4 potatoes
  • 2 oz butter
  • Salt to taste
  • ½ cup tomato sauce
  • 1 tbsp butter
  • 1 squeeze lemon juice
  • ½ cup stock

Method

  1. 1 Peel and slice potatoes into rounds about 1 inch thick.
  2. 2 Melt 2 oz butter in a stewpan and cook potatoes gently until golden.
  3. 3 Season with salt, drain excess butter, and add stock to glaze.
  4. 4 Arrange potatoes on a dish, top with tomato sauce, extra butter, and lemon juice.
