Glazed Beef Brisket With Root Vegetables

Ingredients

  • 5 lb beef brisket
  • 2 carrots, chopped
  • 2 onions, chopped
  • 2 turnips, chopped
  • 1 head celery, chopped
  • 1 sprig parsley
  • Marjoram and thyme
  • 2 bay leaves
  • 6 cloves
  • 1 dozen peppercorns
  • 3 quarts water

Method

  1. 1 Place beef, vegetables, herbs, spices, and water in a large pot.
  2. 2 Simmer gently for 3 hours until meat is tender.
  3. 3 Remove meat and strain cooking liquid, discarding solids and fat.
  4. 4 Boil down the liquid to a glaze and brush over the meat.
  5. 5 Serve hot with gravy, or cool, remove bones, and press the beef.
