Glazed Beef Brisket With Root Vegetables
Ingredients
- 5 lb beef brisket
- 2 carrots, chopped
- 2 onions, chopped
- 2 turnips, chopped
- 1 head celery, chopped
- 1 sprig parsley
- Marjoram and thyme
- 2 bay leaves
- 6 cloves
- 1 dozen peppercorns
- 3 quarts water
Method
- 1 Place beef, vegetables, herbs, spices, and water in a large pot.
- 2 Simmer gently for 3 hours until meat is tender.
- 3 Remove meat and strain cooking liquid, discarding solids and fat.
- 4 Boil down the liquid to a glaze and brush over the meat.
- 5 Serve hot with gravy, or cool, remove bones, and press the beef.
