Ginger Spice Animal Cookies With Sugar Coating
Ingredients
- 1 cup brown sugar
- 1 1/2 cups flour
- 1/4 teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon ginger
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 7 tablespoons shortening
- 1 well-beaten egg
- 6 tablespoons coffee
- 3 tablespoons syrup
- 1 tablespoon boiling water
- confectioner's sugar
Method
- 1 Sift brown sugar, flour, baking soda, baking powder, ginger, cinnamon, and nutmeg together.
- 2 Rub in 7 tablespoons of shortening until the mixture resembles coarse crumbs.
- 3 Mix in the well-beaten egg and 6 tablespoons of coffee to form a soft dough.
- 4 Knead the dough briefly, then roll it out to 1/4-inch thickness on a floured surface.
- 5 Cut into shapes using animal cookie cutters and place on a baking sheet.
- 6 Bake in a moderate oven (350°F) for 10 minutes.
- 7 While warm, brush cookies with a mixture of 3 tablespoons syrup and 1 tablespoon boiling water.
- 8 Roll the coated cookies in confectioner's sugar to finish.
