Ginger Nut Cakes

Ingredients

  • 3 cups butter, softened
  • 6 cups sugar
  • 12 cups all-purpose flour
  • 2 oz ground ginger
  • 1 nutmeg, grated
  • 1 cup warm cream

Method

  1. 1 Preheat oven to 300°F. In a large bowl, rub butter, sugar, flour, ginger, and nutmeg together until the mixture resembles fine crumbs.
  2. 2 Add warm cream gradually, mixing just until the dough comes together. It should be firm enough to roll out thinly.
  3. 3 Roll dough out on a floured surface into very thin sheets. Cut into desired shapes using a cookie cutter or knife.
  4. 4 Place cakes on a baking sheet and bake in a slow oven (300°F) until dry and crisp, about 20-30 minutes. Cool completely.
