Ginger Nut Cakes
Ingredients
- 3 cups butter, softened
- 6 cups sugar
- 12 cups all-purpose flour
- 2 oz ground ginger
- 1 nutmeg, grated
- 1 cup warm cream
Method
- 1 Preheat oven to 300°F. In a large bowl, rub butter, sugar, flour, ginger, and nutmeg together until the mixture resembles fine crumbs.
- 2 Add warm cream gradually, mixing just until the dough comes together. It should be firm enough to roll out thinly.
- 3 Roll dough out on a floured surface into very thin sheets. Cut into desired shapes using a cookie cutter or knife.
- 4 Place cakes on a baking sheet and bake in a slow oven (300°F) until dry and crisp, about 20-30 minutes. Cool completely.
