Ginger Batter Pudding With Melted Butter
Ingredients
- 6 large spoonfuls flour
- 1 quart milk
- 6 egg yolks
- 3 egg whites
- 1 teaspoon salt
- 1 teaspoon beaten ginger
- Melted butter for serving
- Optional: ripe currants, apricots, small plums, damsons, or white bullace
Method
- 1 Mix flour and milk in a pan until smooth.
- 2 Beat egg yolks and whites, then stir into the milk mixture.
- 3 Strain the mixture through a sieve.
- 4 Add salt and beaten ginger; stir well.
- 5 Dip a cloth in boiling water, flour it, pour in the batter, and tie it close.
- 6 Boil for 1 hour (add 30 minutes if using fruit). Serve with melted butter.
