Ginger Batter Pudding With Melted Butter

Ingredients

  • 6 large spoonfuls flour
  • 1 quart milk
  • 6 egg yolks
  • 3 egg whites
  • 1 teaspoon salt
  • 1 teaspoon beaten ginger
  • Melted butter for serving
  • Optional: ripe currants, apricots, small plums, damsons, or white bullace

Method

  1. 1 Mix flour and milk in a pan until smooth.
  2. 2 Beat egg yolks and whites, then stir into the milk mixture.
  3. 3 Strain the mixture through a sieve.
  4. 4 Add salt and beaten ginger; stir well.
  5. 5 Dip a cloth in boiling water, flour it, pour in the batter, and tie it close.
  6. 6 Boil for 1 hour (add 30 minutes if using fruit). Serve with melted butter.
