Ghent Hoche Pot Stew
Ingredients
- 2 large carrots, chopped
- 2 turnips, chopped
- 4 leeks, chopped
- 2 stalks celery, chopped
- 1 head green cabbage, pale leaves only, chopped
- 3 ½ cups water
- Salt, to taste
- 3 lbs pork cutlets
- 1 pig's trotter (optional)
- 4 large potatoes, peeled and cubed
- Black pepper, to taste
Method
- 1 Chop carrots, turnips, leeks, celery, and cabbage. Rinse well and place in a large pot with water and salt.
- 2 Bring to a boil, then simmer for 1 hour until vegetables are tender.
- 3 Add pork cutlets and trotter (if using), ensuring meat stays submerged. Simmer for 1 hour.
- 4 Add potatoes 30 minutes before serving. Simmer until potatoes are cooked through and tender.
- 5 Season with salt and pepper to taste before serving.
