Ghent Hoche Pot Stew

Ingredients

  • 2 large carrots, chopped
  • 2 turnips, chopped
  • 4 leeks, chopped
  • 2 stalks celery, chopped
  • 1 head green cabbage, pale leaves only, chopped
  • 3 ½ cups water
  • Salt, to taste
  • 3 lbs pork cutlets
  • 1 pig's trotter (optional)
  • 4 large potatoes, peeled and cubed
  • Black pepper, to taste

Method

  1. 1 Chop carrots, turnips, leeks, celery, and cabbage. Rinse well and place in a large pot with water and salt.
  2. 2 Bring to a boil, then simmer for 1 hour until vegetables are tender.
  3. 3 Add pork cutlets and trotter (if using), ensuring meat stays submerged. Simmer for 1 hour.
  4. 4 Add potatoes 30 minutes before serving. Simmer until potatoes are cooked through and tender.
  5. 5 Season with salt and pepper to taste before serving.
