German Yeast Quartern Loaf
Ingredients
- 3 lb flour
- 1 pint water
- 0.5 oz salt
- 1 oz German yeast
Method
- 1 Place 3 lb flour in a large bowl.
- 2 Mix lukewarm water with yeast, then gradually stir into the flour to form a smooth dough.
- 3 Knead lightly for 1-2 minutes, sprinkle with flour, and let rise in a warm place for 2 hours.
- 4 Knead well for 15 minutes, incorporating any remaining flour.
- 5 Shape into a loaf, place on a floured tin, and let rise for 20 minutes.
- 6 Bake in a very hot oven for the first few minutes, then reduce heat to finish cooking through.
