German Yeast Quartern Loaf

Ingredients

  • 1 pint water
  • 0.5 oz salt
  • 1 oz German yeast

Method

  1. 1 Place 3 lb flour in a large bowl.
  2. 2 Mix lukewarm water with yeast, then gradually stir into the flour to form a smooth dough.
  3. 3 Knead lightly for 1-2 minutes, sprinkle with flour, and let rise in a warm place for 2 hours.
  4. 4 Knead well for 15 minutes, incorporating any remaining flour.
  5. 5 Shape into a loaf, place on a floured tin, and let rise for 20 minutes.
  6. 6 Bake in a very hot oven for the first few minutes, then reduce heat to finish cooking through.
