German Style Potato Salad With Beef Broth

Ingredients

  • 1 quart potatoes, sliced or cubed
  • ½ cup beef broth
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 8 tablespoons oil
  • 1 tablespoon grated onion
  • 2 hard-boiled eggs, chopped
  • 4 tablespoons vinegar
  • 1 teaspoon mustard
  • 1 teaspoon sugar
  • Fresh parsley, finely chopped
  • 1 cup mushrooms, optional

Method

  1. 1 Boil potatoes whole without peeling until tender.
  2. 2 Peel and slice or cube potatoes while hot.
  3. 3 Pour beef broth over potatoes and sprinkle with salt and paprika.
  4. 4 Add oil and grated onion; mix lightly and let sit for several hours.
  5. 5 Whisk vinegar into mustard and sugar, then add remaining oil.
  6. 6 Chop egg whites and sieve yolks; mix into dressing.
  7. 7 Toss salad with dressing, garnish with parsley and mushrooms if using.
