German Style Potato Salad With Beef Broth
Ingredients
- 1 quart potatoes, sliced or cubed
- ½ cup beef broth
- 1 teaspoon salt
- ½ teaspoon paprika
- 8 tablespoons oil
- 1 tablespoon grated onion
- 2 hard-boiled eggs, chopped
- 4 tablespoons vinegar
- 1 teaspoon mustard
- 1 teaspoon sugar
- Fresh parsley, finely chopped
- 1 cup mushrooms, optional
Method
- 1 Boil potatoes whole without peeling until tender.
- 2 Peel and slice or cube potatoes while hot.
- 3 Pour beef broth over potatoes and sprinkle with salt and paprika.
- 4 Add oil and grated onion; mix lightly and let sit for several hours.
- 5 Whisk vinegar into mustard and sugar, then add remaining oil.
- 6 Chop egg whites and sieve yolks; mix into dressing.
- 7 Toss salad with dressing, garnish with parsley and mushrooms if using.
