German Fruit Cake With Almonds

Ingredients

  • 250 g butter
  • 200 g sugar
  • 7 egg yolks
  • 1/4 to 1/2 cup cold milk
  • 1 lb flour (divided)
  • 100 g currants
  • 100 g raisins
  • 50 g candied orange peel
  • Zest of 1/2 lemon
  • 3 egg whites
  • 1 packet baking powder (approx. 10g)
  • Butter and sliced almonds for pan

Method

  1. 1 Preheat oven to 350°F. Grease a cake pan with butter and coat with sliced almonds.
  2. 2 Beat butter and sugar until light and fluffy. In a separate bowl, whisk egg yolks with cold milk.
  3. 3 Gradually stir the yolk mixture into the butter. Add half of the flour and mix until combined.
  4. 4 Fold in currants, raisins, candied orange peel, and lemon zest.
  5. 5 Whip egg whites to stiff peaks. Gently fold in the remaining flour and baking powder, then fold in the egg whites.
  6. 6 Pour batter into prepared pan. Bake at 350°F for 1 hour and 15 minutes, or until golden and a toothpick comes out clean.
