German Fruit Cake With Almonds
Ingredients
- 250 g butter
- 200 g sugar
- 7 egg yolks
- 1/4 to 1/2 cup cold milk
- 1 lb flour (divided)
- 100 g currants
- 100 g raisins
- 50 g candied orange peel
- Zest of 1/2 lemon
- 3 egg whites
- 1 packet baking powder (approx. 10g)
- Butter and sliced almonds for pan
Method
- 1 Preheat oven to 350°F. Grease a cake pan with butter and coat with sliced almonds.
- 2 Beat butter and sugar until light and fluffy. In a separate bowl, whisk egg yolks with cold milk.
- 3 Gradually stir the yolk mixture into the butter. Add half of the flour and mix until combined.
- 4 Fold in currants, raisins, candied orange peel, and lemon zest.
- 5 Whip egg whites to stiff peaks. Gently fold in the remaining flour and baking powder, then fold in the egg whites.
- 6 Pour batter into prepared pan. Bake at 350°F for 1 hour and 15 minutes, or until golden and a toothpick comes out clean.
