German Apple And Prune Pie
Ingredients
- 6 tbsp Crisco
- 3/4 cup all-purpose flour
- 3/4 cup potato flour
- 1 tbsp sugar
- 1/2 tsp mixed spices
- 1/4 tsp salt
- 1 tsp lemon juice
- cold water
- 3 apples, peeled, cored, and sliced
- 3/4 cup prunes
- 4 tbsp sugar
- 1/2 lemon (grated rind)
- 1/2 cup water
- 1 tbsp cake crumbs
Method
- 1 Stew sliced apples, prunes, sugar, lemon rind, and water in a saucepan until apples are soft.
- 2 Remove prunes, pit them, chop into small pieces, and return to apples; cool the mixture.
- 3 Sift flours, sugar, spices, and salt together. Cut in Crisco until fine, then rub lightly to incorporate air.
- 4 Add lemon juice and enough cold water to form a stiff paste. Divide dough into two equal pieces.
- 5 Roll out one piece and line a wetted dinner plate. Sprinkle with cake crumbs, then spread the cooled fruit mixture.
- 6 Roll out the second piece, place on top, seal and trim edges. Brush with water or egg white, dust with sugar, and bake at 350°F for 45 minutes.
