Genoese Sponge Cake
Ingredients
- 3 eggs
- equal weight of butter, sugar, and flour
- 1/8 tsp salt
- 1/2 tsp vanilla or almond extract, or 1 tbsp brandy
- sifted flour
Method
- 1 Beat butter and sugar until light and creamy. Add salt and flavoring of choice.
- 2 Add eggs one at a time, beating well after each addition. Beat mixture for 15-20 minutes.
- 3 Lightly stir in sifted flour. Pour into a pan, filling it three-quarters full.
- 4 Bake in a slow oven (300°F) for about 40 minutes.
