Genoese Sponge Cake

Ingredients

  • 3 eggs
  • equal weight of butter, sugar, and flour
  • 1/8 tsp salt
  • 1/2 tsp vanilla or almond extract, or 1 tbsp brandy
  • sifted flour

Method

  1. 1 Beat butter and sugar until light and creamy. Add salt and flavoring of choice.
  2. 2 Add eggs one at a time, beating well after each addition. Beat mixture for 15-20 minutes.
  3. 3 Lightly stir in sifted flour. Pour into a pan, filling it three-quarters full.
  4. 4 Bake in a slow oven (300°F) for about 40 minutes.
