Garlic Toast Tomato Omelet

Ingredients

  • 1/2 slice whole wheat bread
  • 1/2 teaspoon olive oil
  • 1 garlic clove, finely chopped
  • Non-stick cooking spray
  • 3/4 cup egg substitute
  • 2 tablespoons part-skim grated mozzarella cheese
  • 1 large tomato, chopped
  • 1 teaspoon fresh or dried basil

Method

  1. 1 Preheat oven to 300°F. Cut bread into cubes and toss with olive oil and chopped garlic.
  2. 2 Spread bread cubes on a baking sheet and toast for 15-25 minutes until golden, tossing once or twice. Cool on a plate.
  3. 3 Spray a medium pan with non-stick spray and heat over medium-high. Pour in egg substitute.
  4. 4 When eggs begin to set, spread evenly and reduce heat to low. Sprinkle cheese and basil on top.
  5. 5 Scatter tomatoes and toasted bread over half the omelet. Fold the empty half over the filling and serve.
