Garlic Toast Tomato Omelet
Ingredients
- 1/2 slice whole wheat bread
- 1/2 teaspoon olive oil
- 1 garlic clove, finely chopped
- Non-stick cooking spray
- 3/4 cup egg substitute
- 2 tablespoons part-skim grated mozzarella cheese
- 1 large tomato, chopped
- 1 teaspoon fresh or dried basil
Method
- 1 Preheat oven to 300°F. Cut bread into cubes and toss with olive oil and chopped garlic.
- 2 Spread bread cubes on a baking sheet and toast for 15-25 minutes until golden, tossing once or twice. Cool on a plate.
- 3 Spray a medium pan with non-stick spray and heat over medium-high. Pour in egg substitute.
- 4 When eggs begin to set, spread evenly and reduce heat to low. Sprinkle cheese and basil on top.
- 5 Scatter tomatoes and toasted bread over half the omelet. Fold the empty half over the filling and serve.
