Garlic Lemon Roasted Chicken

Ingredients

  • 1 broiler/fryer chicken (thawed if frozen)
  • 2 tablespoons low-fat Italian dressing or olive oil
  • 1 teaspoon garlic salt
  • 1 lemon or orange, quartered

Method

  1. 1 Preheat oven to 375°F.
  2. 2 Remove necks and giblets from the chicken cavity.
  3. 3 Place chicken breast side up in a roasting pan.
  4. 4 Brush skin with Italian dressing and sprinkle with garlic salt.
  5. 5 Stuff the cavity with quartered lemon or orange.
  6. 6 Roast for 1 1/4 to 1 1/2 hours until internal temperature reaches 165°F.
  7. 7 Let chicken rest for 15 minutes before carving.
