Garbanzo Bean Mashed Potatoes

Ingredients

  • 2 pounds baking potatoes, peeled and cut into chunks
  • 1 can garbanzo beans (15 ounces), drained
  • 1/4 cup non-fat milk or fortified soy milk
  • 1/2 teaspoon Parmesan cheese
  • Garlic powder and black pepper to taste

Method

  1. 1 Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat, then reduce to a simmer.
  2. 2 Add garbanzo beans 10 minutes after the potatoes start cooking. Continue cooking until potatoes are fork-tender, about 20 minutes total.
  3. 3 Drain the water and return the saucepan to the stove. Mash the beans and potatoes using a potato masher or hand beaters.
  4. 4 Stir in the milk, Parmesan cheese, garlic powder, and black pepper.
  5. 5 Reheat if necessary and serve hot.
