Garbanzo Bean Mashed Potatoes
Ingredients
- 2 pounds baking potatoes, peeled and cut into chunks
- 1 can garbanzo beans (15 ounces), drained
- 1/4 cup non-fat milk or fortified soy milk
- 1/2 teaspoon Parmesan cheese
- Garlic powder and black pepper to taste
Method
- 1 Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat, then reduce to a simmer.
- 2 Add garbanzo beans 10 minutes after the potatoes start cooking. Continue cooking until potatoes are fork-tender, about 20 minutes total.
- 3 Drain the water and return the saucepan to the stove. Mash the beans and potatoes using a potato masher or hand beaters.
- 4 Stir in the milk, Parmesan cheese, garlic powder, and black pepper.
- 5 Reheat if necessary and serve hot.
