Fruit Cornmeal Muffins

  • 2 cups yellow cornmeal
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 pinch salt
  • 2 teaspoons baking powder
  • 1 tablespoon melted butter
  • 2 eggs, well beaten
  • 1 ½ cups milk
  • 1 cup fruit (dates, figs, or prunes, pitted and chopped)

Method

  1. 1 Preheat oven to 350°F. Prepare muffin pans by buttering them well.
  2. 2 In a bowl, combine cornmeal, flour, sugar, salt, and baking powder.
  3. 3 Stir in melted butter, beaten eggs, and milk until just combined.
