Fruit Cornmeal Muffins
Ingredients
- 2 cups yellow cornmeal
- 1 cup flour
- 2 tablespoons sugar
- 1 pinch salt
- 2 teaspoons baking powder
- 1 tablespoon melted butter
- 2 eggs, well beaten
- 1 ½ cups milk
- 1 cup fruit (dates, figs, or prunes, pitted and chopped)
Method
- 1 Preheat oven to 350°F. Prepare muffin pans by buttering them well.
- 2 In a bowl, combine cornmeal, flour, sugar, salt, and baking powder.
- 3 Stir in melted butter, beaten eggs, and milk until just combined.
- 4 Fold in the chopped fruit.
- 5 Pour batter into prepared pans and bake for about 20 minutes.
