Fruit Cake With Nuts And Citron
Ingredients
- 8 oz creamery butter
- 2 cups sugar
- 6 eggs
- 5 cups sifted flour
- 2 level tbsp baking powder
- 1 cup seeded raisins
- 1 cup currants
- 1 cup finely chopped citron
- 1 ¼ cups milk
- 1 cup finely chopped nuts
Method
- 1 Cream butter and sugar until frothy and light like snow.
- 2 Add eggs one at a time, beating well after each addition.
- 3 Mix in flour, baking powder, raisins, currants, citron, milk, and nuts.
- 4 Pour into a greased and floured pan lined with parchment paper.
- 5 Bake in a slow oven (300°F) for one and one-half hours.
