Fruit Cake With Nuts And Citron

Ingredients

  • 8 oz creamery butter
  • 2 cups sugar
  • 6 eggs
  • 5 cups sifted flour
  • 2 level tbsp baking powder
  • 1 cup seeded raisins
  • 1 cup currants
  • 1 cup finely chopped citron
  • 1 ¼ cups milk
  • 1 cup finely chopped nuts

Method

  1. 1 Cream butter and sugar until frothy and light like snow.
  2. 2 Add eggs one at a time, beating well after each addition.
  3. 3 Mix in flour, baking powder, raisins, currants, citron, milk, and nuts.
  4. 4 Pour into a greased and floured pan lined with parchment paper.
  5. 5 Bake in a slow oven (300°F) for one and one-half hours.
