Fruit Cake With Currants Raisins And Candied Peel
Ingredients
- 1 lb all-purpose flour
- 0.5 lb butter
- 0.5 lb brown sugar
- 0.25 lb currants
- 0.25 lb raisins
- 0.25 lb candied peel
- 4 eggs
- 0.75 cup milk
Method
- 1 Cut candied peel into thin strips. In a large bowl, mix flour, sugar, currants, raisins, peel, butter, and eggs until well combined.
- 2 Stir in milk to form a thick batter. Pour the mixture into a buttered loaf tin.
- 3 Bake in a moderate oven (350°F) for 2 hours, or until a skewer inserted into the center comes out clean.
