Fruit And Nut Gem Cakes
Ingredients
- 1 cup sugar
- 1/2 cup Crisco
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 4 tablespoons currants
- 4 tablespoons chopped nut meats
- 2 tablespoons chopped candied citron peel
- 3 eggs
- 2/3 cup milk
- 1 teaspoon vanilla extract
Method
- 1 Cream Crisco and sugar together, then add well-beaten egg yolks.
- 2 Beat egg whites stiffly and add alternately with the milk.
- 3 Stir in sifted flour, baking powder, salt, fruits, nuts, and vanilla extract.
- 4 Divide mixture into greased and floured gem pans.
- 5 Bake for 20 minutes in a moderate oven (350°F).
