Ingredients

  • 1 pint heavy cream
  • 1 cup fruit pulp (juice drained)
  • Powdered sugar (as needed)
  • Vanilla extract (optional)
  • Cochineal (optional, for color)

Method

  1. 1 Whip the heavy cream until very stiff.
  2. 2 Drain the fruit pulp to remove excess juice.
  3. 3 Mix the fruit pulp with powdered sugar until it matches the consistency of the whipped cream.
  4. 4 Gently fold the fruit mixture into the whipped cream. Add vanilla or cochineal if desired.
  5. 5 Pack the mousse in ice and salt for three hours to set.
