Fruit And Almond Yeast Cake
Ingredients
- 1 cup milk, scalded and cooled
- 1 cake compressed yeast
- 1 pinch salt
- 1 tbsp brown sugar
- 1 cup flour
- 3/4 cup butter
- 3/4 cup powdered sugar
- 4 whole eggs
- 3 egg yolks
- 2 cups flour
- 1/2 cup blanched shredded almonds
- 1 tbsp shredded citron
- 1/2 cup cleaned seeded raisins
- 1 tbsp flour (for dredging fruit)
- butter for pan
- softened butter for rubbing
- granulated sugar for sprinkling
- spice for sprinkling
Method
- 1 Dissolve yeast in warm milk with salt and brown sugar. Sift 1 cup flour into bowl, add yeast mixture, and beat to a smooth batter. Let rise in a warm place until very light.
- 2 Cream butter and powdered sugar. Add eggs and yolks. Alternately add 2 cups flour and the egg mixture, working with hands. Fold this into the risen yeast batter.
- 3 Toss almonds, citron, and raisins with 1 tbsp flour. Work fruit into the dough. Place in a buttered tube pan and let rise for 3-4 hours.
- 4 Bake at 350°F for 1 hour. When beginning to brown, rub with softened butter and sprinkle with sugar and spice. Return to oven until done.
- 5 Wrap cake in a cloth to keep moist. Serve cold or reheat in a 400°F oven for a few minutes before serving.
