Frozen Watermelon Sherry Sherbet
Ingredients
- 1 pint watermelon juice (scraped from center of ripe watermelon)
- ½ cup sugar
- 4 tbsp sherry
Method
- 1 Scrape the center from a very ripe watermelon, chop quickly, and press through a colander to extract the juice.
- 2 To each pint of juice, add ½ cup sugar and 4 tablespoons of sherry. Stir to dissolve the sugar.
- 3 Freeze the mixture until it has the texture of wet snow.
- 4 Serve immediately in stemmed glasses.
