Frozen Watermelon Sherry Sherbet

Ingredients

  • 1 pint watermelon juice (scraped from center of ripe watermelon)
  • ½ cup sugar
  • 4 tbsp sherry

Method

  1. 1 Scrape the center from a very ripe watermelon, chop quickly, and press through a colander to extract the juice.
  2. 2 To each pint of juice, add ½ cup sugar and 4 tablespoons of sherry. Stir to dissolve the sugar.
  3. 3 Freeze the mixture until it has the texture of wet snow.
  4. 4 Serve immediately in stemmed glasses.
