Frozen Pistachio Custard
Ingredients
- 1 quart milk
- 6 ounces sugar
- 2 ounces pistachios
- 4 egg yolks
Method
- 1 Skin the pistachios in warm water and grind them very fine with 1 tablespoon of the sugar.
- 2 In a saucepan, mix the ground pistachios, egg yolks, and remaining sugar.
- 3 Add the milk and stir constantly over heat until the mixture thickens like cream.
- 4 Remove from heat, let cool completely, then freeze in an ice cream maker or freezer.
