Frozen Pistachio Custard

Ingredients

  • 1 quart milk
  • 6 ounces sugar
  • 2 ounces pistachios
  • 4 egg yolks

Method

  1. 1 Skin the pistachios in warm water and grind them very fine with 1 tablespoon of the sugar.
  2. 2 In a saucepan, mix the ground pistachios, egg yolks, and remaining sugar.
  3. 3 Add the milk and stir constantly over heat until the mixture thickens like cream.
  4. 4 Remove from heat, let cool completely, then freeze in an ice cream maker or freezer.
