Frozen Pistachio Cream
Ingredients
- pistachio nuts
- sugar
- water
- green food coloring
- gelatin
- cold water
- heavy cream
Method
- 1 Blanch pistachio nuts and grind them finely.
- 2 Boil sugar and water for five minutes, then cool.
- 3 Add food coloring, ground pistachios, and gelatin (moistened in cold water) to the cooled syrup.
- 4 Once the mixture is cold, fold in heavy cream beaten to stiff peaks.
- 5 Pour into a mold and freeze until set.
