Frozen Pistachio Cream

Ingredients

  • pistachio nuts
  • sugar
  • water
  • green food coloring
  • gelatin
  • cold water
  • heavy cream

Method

  1. 1 Blanch pistachio nuts and grind them finely.
  2. 2 Boil sugar and water for five minutes, then cool.
  3. 3 Add food coloring, ground pistachios, and gelatin (moistened in cold water) to the cooled syrup.
  4. 4 Once the mixture is cold, fold in heavy cream beaten to stiff peaks.
  5. 5 Pour into a mold and freeze until set.
