Frozen Chocolate Mousse
Ingredients
- 1 quart heavy cream
- 1 ounce bittersweet chocolate
- 3 tablespoons granulated sugar
- 1 tablespoon boiling water
- 3 tablespoons heavy cream
- 1 cup powdered sugar
Method
- 1 Line a three-quart mold with fine ice and coarse salt. Pack the surrounding space with a mixture of 2 quarts of salt and enough ice to fill the void.
- 2 Whip 1 quart of heavy cream until stiff, then drain it through a sieve. Whip the drained cream again until stiff.
- 3 Melt chocolate, 3 tablespoons sugar, and 1 tablespoon boiling water in a pan over heat until smooth and glossy. Stir in 3 tablespoons of cream.
- 4 Fold powdered sugar into the whipped cream. Gently stir in the chocolate mixture until well combined.
- 5 Wipe the chilled mold, fill with the mousse, cover, and place ice on top. Cover the pail with a wet cloth and freeze for 3-4 hours.
- 6 Remove the mold from the ice, dip briefly in cold water, wipe dry, and invert onto a serving dish.
