Fried Vegetable Marrow Slices

Ingredients

  • 1 vegetable marrow
  • butter or dripping for frying
  • salt to taste
  • pepper to taste
  • light batter for dipping (optional)

Method

  1. 1 Cut the vegetable marrow into half-inch thick slices. Peel the skin and remove the spongy inner portion.
  2. 2 Heat butter or dripping in a frying pan over medium-high heat. Season the slices with salt and pepper.
  3. 3 Fry the slices in the hot fat until golden brown on both sides. Alternatively, dip slices in light batter before frying.
