Fried Vegetable Marrow Slices
Ingredients
- 1 vegetable marrow
- butter or dripping for frying
- salt to taste
- pepper to taste
- light batter for dipping (optional)
Method
- 1 Cut the vegetable marrow into half-inch thick slices. Peel the skin and remove the spongy inner portion.
- 2 Heat butter or dripping in a frying pan over medium-high heat. Season the slices with salt and pepper.
- 3 Fry the slices in the hot fat until golden brown on both sides. Alternatively, dip slices in light batter before frying.
