Fried Vanilla Choux Puffs

Ingredients

  • 3 oz butter
  • ½ pint water
  • flour (enough to make stiff dough)
  • 3 egg yolks
  • 3 egg whites
  • 2 tsp sugar
  • vanilla extract
  • hot fat for frying

Method

  1. 1 Boil butter and water together. Add flour and stir until the mixture is stiff enough to leave the sides of the pan.
  2. 2 Remove from heat and let cool slightly. Beat in egg yolks until well combined.
  3. 3 Once cool, fold in beaten egg whites (stiff froth), sugar, and vanilla.
  4. 4 Drop spoonfuls into hot fat and fry until golden. Serve immediately.
