Fried Vanilla Choux Puffs
Ingredients
- 3 oz butter
- ½ pint water
- flour (enough to make stiff dough)
- 3 egg yolks
- 3 egg whites
- 2 tsp sugar
- vanilla extract
- hot fat for frying
Method
- 1 Boil butter and water together. Add flour and stir until the mixture is stiff enough to leave the sides of the pan.
- 2 Remove from heat and let cool slightly. Beat in egg yolks until well combined.
- 3 Once cool, fold in beaten egg whites (stiff froth), sugar, and vanilla.
- 4 Drop spoonfuls into hot fat and fry until golden. Serve immediately.
