Fried Tomatoes With Brown Sugar Gravy

Ingredients

  • 4 large ripe tomatoes
  • 2 tablespoons hot fat or butter
  • 2 tablespoons brown sugar
  • Flour for dredging
  • ½ cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon flour

Method

  1. 1 Slice tomatoes into ½-inch rounds and dredge thickly in flour.
  2. 2 Fry in 2 tablespoons hot fat or butter until browned on both sides. Remove to a platter and season with salt, pepper, and brown sugar.
  3. 3 Add 1 tablespoon butter to the pan drippings and whisk in 1 tablespoon flour.
  4. 4 Stir in milk and cook, stirring constantly, until thickened to the consistency of heavy cream.
  5. 5 Pour the gravy over the tomatoes and serve immediately.
