Fried Tomatoes With Brown Sugar Gravy
Ingredients
- 4 large ripe tomatoes
- 2 tablespoons hot fat or butter
- 2 tablespoons brown sugar
- Flour for dredging
- ½ cup milk
- Salt and pepper to taste
- 1 tablespoon butter
- 1 tablespoon flour
Method
- 1 Slice tomatoes into ½-inch rounds and dredge thickly in flour.
- 2 Fry in 2 tablespoons hot fat or butter until browned on both sides. Remove to a platter and season with salt, pepper, and brown sugar.
- 3 Add 1 tablespoon butter to the pan drippings and whisk in 1 tablespoon flour.
- 4 Stir in milk and cook, stirring constantly, until thickened to the consistency of heavy cream.
- 5 Pour the gravy over the tomatoes and serve immediately.
