Fried Tomato Omelet
Ingredients
- 2 tomatoes
- 2 tablespoons shortening
- 3 eggs
- Salt and pepper to taste
Method
- 1 Dip tomatoes in boiling water to loosen skins, then peel and slice.
- 2 Heat shortening in a pan and fry tomato slices, turning frequently.
- 3 Prepare and cook eggs in a separate pan until dry and ready to fold.
- 4 Pour fried tomatoes over the omelet, season, fold, roll, and serve.
