Fried Sweet Rice Cakes

Ingredients

  • 1 cup cooked rice
  • ½ cup milk
  • 1 egg
  • 1 tbsp sugar
  • Pinch of salt
  • Grated nutmeg or cinnamon to taste
  • Egg for dipping
  • Breadcrumbs for coating

Method

  1. 1 Bring milk to a boil in a saucepan. Add rice, sugar, salt, and nutmeg or cinnamon.
  2. 2 Stir in the egg and cook until the mixture thickens. Remove from heat and let cool completely.
  3. 3 Form the cooled mixture into small flat cakes. Dip each cake in beaten egg, then coat with breadcrumbs.
  4. 4 Fry in oil until golden brown on both sides. Serve warm.
