Fried Sweet Rice Cakes
Ingredients
- 1 cup cooked rice
- ½ cup milk
- 1 egg
- 1 tbsp sugar
- Pinch of salt
- Grated nutmeg or cinnamon to taste
- Egg for dipping
- Breadcrumbs for coating
Method
- 1 Bring milk to a boil in a saucepan. Add rice, sugar, salt, and nutmeg or cinnamon.
- 2 Stir in the egg and cook until the mixture thickens. Remove from heat and let cool completely.
- 3 Form the cooled mixture into small flat cakes. Dip each cake in beaten egg, then coat with breadcrumbs.
- 4 Fry in oil until golden brown on both sides. Serve warm.
