Fried Sweet Rice Balls

Ingredients

  • 1 scant cup rice
  • 1 pint milk
  • 1 teaspoon butter
  • 2 tablespoons sugar
  • salt to taste
  • 1 egg yolk, well beaten
  • raisins or candied cherries
  • 1 egg, beaten
  • breadcrumbs
  • oil for frying
  • powdered sugar

Method

  1. 1 Wash 1 scant cup of rice thoroughly in cold water.
  2. 2 Cook rice in a double boiler with 1 pint milk, covered, until soft.
  3. 3 Stir in 1 teaspoon butter, 2 tablespoons sugar, salt, and 1 well-beaten egg yolk.
  4. 4 Let mixture cool, then mold into small balls, pressing a raisin or candied cherry into each center.
  5. 5 Dip balls in beaten egg, roll in breadcrumbs, and fry in hot oil until golden.
  6. 6 Drain and roll in powdered sugar before serving.
