Fried Sweet Rice Balls
Ingredients
- 1 scant cup rice
- 1 pint milk
- 1 teaspoon butter
- 2 tablespoons sugar
- salt to taste
- 1 egg yolk, well beaten
- raisins or candied cherries
- 1 egg, beaten
- breadcrumbs
- oil for frying
- powdered sugar
Method
- 1 Wash 1 scant cup of rice thoroughly in cold water.
- 2 Cook rice in a double boiler with 1 pint milk, covered, until soft.
- 3 Stir in 1 teaspoon butter, 2 tablespoons sugar, salt, and 1 well-beaten egg yolk.
- 4 Let mixture cool, then mold into small balls, pressing a raisin or candied cherry into each center.
- 5 Dip balls in beaten egg, roll in breadcrumbs, and fry in hot oil until golden.
- 6 Drain and roll in powdered sugar before serving.
