Fried Spring Chicken With Tartare Sauce
Ingredients
- 1 small spring chicken
- oil for marinating
- vinegar for marinating
- pepper
- salt
- flour for rolling
- hot fat for frying
- Tartare sauce
Method
- 1 Split the chicken down the back, remove the breast bone, and cut into four pieces (two breast, two leg). Cut off the pinions.
- 2 Marinate the pieces in oil, vinegar, pepper, and salt. Roll them in flour.
- 3 Fry the pieces in hot fat, one at a time, until golden brown.
- 4 Drain and place in a hot oven (425°F) until cooked through.
- 5 Place a paper frill on the leg and wing bones. Serve on a folded napkin with Tartare sauce or garnished with lettuce leaves holding sauce.
