Fried Spring Chicken With Tartare Sauce

Ingredients

  • 1 small spring chicken
  • oil for marinating
  • vinegar for marinating
  • pepper
  • salt
  • flour for rolling
  • hot fat for frying
  • Tartare sauce

Method

  1. 1 Split the chicken down the back, remove the breast bone, and cut into four pieces (two breast, two leg). Cut off the pinions.
  2. 2 Marinate the pieces in oil, vinegar, pepper, and salt. Roll them in flour.
  3. 3 Fry the pieces in hot fat, one at a time, until golden brown.
  4. 4 Drain and place in a hot oven (425°F) until cooked through.
  5. 5 Place a paper frill on the leg and wing bones. Serve on a folded napkin with Tartare sauce or garnished with lettuce leaves holding sauce.
