Fried Soft Shell Crabs With Tartare Sauce

  • soft-shell crabs
  • flour
  • beaten egg
  • fine breadcrumbs
  • hot fat for frying
  • tartare sauce

Method

  1. 1 Clean the crabs by removing the apron, spongy gills, and entrails. Wash and drain well.
  2. 2 Roll the crabs in flour, dip in beaten egg, then coat in fine breadcrumbs.
  3. 3 Fry in hot fat until golden brown.
  4. 4 Place in a hot oven (425°F) for ten minutes to finish cooking.
  5. 5 Serve with tartare sauce.
