Fried Smelt Rings

Ingredients

  • Smelts
  • Salt and pepper
  • Egg
  • Bread or cracker crumbs

Method

  1. 1 Wash, dry, and sprinkle smelts with salt and pepper.
  2. 2 Dip smelts in egg, then roll in bread or cracker crumbs.
  3. 3 Pin head and tail together with a skewer to form rings.
  4. 4 Fry in batches until cooked through.
  5. 5 Remove skewers, serve on a napkin with Mayonnaise or Tartare sauce.
