Fried Shad Roes With Scrambled Eggs
Ingredients
- shad roes
- salt
- flour
- eggs
Method
- 1 Scald shad roes in boiling salted water for 10 minutes.
- 2 Drain roes and transfer to cold water for 3 minutes.
- 3 Wipe roes dry and refrigerate until ready to use.
- 4 Cut roes into pieces 1 inch wide and roll in flour.
- 5 Fry roes in oil until golden brown.
- 6 Scramble eggs in a pan.
- 7 Place fried roes in the center of a heated platter.
- 8 Arrange scrambled eggs around the roes.
