Method

  1. 1 Scald shad roes in boiling salted water for 10 minutes.
  2. 2 Drain roes and transfer to cold water for 3 minutes.
  3. 3 Wipe roes dry and refrigerate until ready to use.
  4. 4 Cut roes into pieces 1 inch wide and roll in flour.
  5. 5 Fry roes in oil until golden brown.
  6. 6 Scramble eggs in a pan.
  7. 7 Place fried roes in the center of a heated platter.
