Fried Shad Roe
Ingredients
- shad roe
- salt
- acid (e.g., vinegar or lemon juice)
- beaten egg
- seasoned breadcrumbs
- deep fat for frying
Method
- 1 Parboil the roe for 10 minutes in salted and acidulated water.
- 2 Drain, plunge into cold water to cool, then drain again.
- 3 Dip the roe in beaten egg, then coat with seasoned breadcrumbs.
- 4 Fry in deep fat until brown.
- 5 Serve with any preferred sauce.
