Fried Shad Roe

Ingredients

  • shad roe
  • salt
  • acid (e.g., vinegar or lemon juice)
  • beaten egg
  • seasoned breadcrumbs
  • deep fat for frying

Method

  1. 1 Parboil the roe for 10 minutes in salted and acidulated water.
  2. 2 Drain, plunge into cold water to cool, then drain again.
  3. 3 Dip the roe in beaten egg, then coat with seasoned breadcrumbs.
  4. 4 Fry in deep fat until brown.
  5. 5 Serve with any preferred sauce.
