Fried Savory Potato And Onion Cakes
Ingredients
- 3 ounces mashed potato
- 2 ounces bread crumbs
- 1 ounce vermicelli or semolina
- 1 onion
- ½ teaspoon mixed herbs
- ½ teaspoon grated lemon rind
- 1 teaspoon cream or milk
- 1 egg
- 2 teaspoons minced parsley
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ ounce butter
- 1 ounce butter for frying
Method
- 1 Peel the onion and boil it for half an hour in salted water.
- 2 Chop the boiled onion very fine and mix it with the mashed potato, bread crumbs, vermicelli, herbs, lemon rind, cream, parsley, salt, and pepper.
- 3 Beat the egg, separating the white and yolk, then add to the mixture and stir well.
- 4 Form the mixture into little balls, sausages, or flat cakes.
- 5 Fry in butter until nicely browned, or roll in egg and bread crumbs and fry in oil if preferred.
