Fried Salt Cod Cakes
Ingredients
- Salt cod
- Water
- Egg sauce or drawn butter
- Leftover cod fish
- Mashed potatoes
- Flour
- Pepper
- Ham drippings
Method
- 1 Soak the salt cod overnight in water. Change the water in the morning and let it soak for two more hours until ready to cook.
- 2 Place the cod in a pot and heat to scalding. Keep it hot but do not let it boil, or the fish will become hard. Serve with egg sauce or drawn butter.
- 3 Mix leftover cod with mashed potatoes and enough flour to bind. Season with pepper and form into small cakes.
- 4 Fry the cod cakes in ham drippings until golden brown.
