Fried Salt Cod Cakes

Ingredients

  • Salt cod
  • Water
  • Egg sauce or drawn butter
  • Leftover cod fish
  • Mashed potatoes
  • Flour
  • Pepper
  • Ham drippings

Method

  1. 1 Soak the salt cod overnight in water. Change the water in the morning and let it soak for two more hours until ready to cook.
  2. 2 Place the cod in a pot and heat to scalding. Keep it hot but do not let it boil, or the fish will become hard. Serve with egg sauce or drawn butter.
  3. 3 Mix leftover cod with mashed potatoes and enough flour to bind. Season with pepper and form into small cakes.
  4. 4 Fry the cod cakes in ham drippings until golden brown.
