Fried Salsify Cakes
Ingredients
- salsify roots (oyster plant)
- butter
- pepper
- salt
- egg
- flour
- cream
Method
- 1 Scrape the salsify roots and boil them until soft.
- 2 Mash the cooked roots and mix in butter, pepper, salt, egg, and enough flour to hold the mixture together.
- 3 Form the mixture into cakes the size of an oyster.
- 4 Fry the cakes in butter until golden brown.
